Ettie had a meltdown on Wednesday, the reams of long division questions had taken its toll - on us both tbh - and the English work far too taxing. So after a gruelling morning, we threw in the towel and Ettie put her energies in to something she had always wanted to do.⁠

Cook dinner all by herself✨⁠
⁠
Inspired by the gorgeously giggly @triplets_in_my_kitchen making @bettinas_kitchen Gnudi with tomato and basil recipe earlier on in the week, she knew instantly this was where she wanted her initiation in to the independent cooking world to begin.⁠

The girl did good, one truly delicious meal that she was proud to call her own. Let's face it, if I had put something new in front of the kids they all would have made a meal of it (scuse the pun!). But the fact that she made it, all three of them ate it in wonderment, congratulating her on multiple occasions about what a good job she'd done. Typical!⁠

Trust me, watching Ettie challenge herself in ways her school work didn't was such a delight - oh and she even wrote a few descriptive sentences in her menu for her future restaurant - English assignment done👊🏽⁠

Don’t get me wrong, it’s not pleasant outside right now, but enough of hiding inside, I need to get out!

Yep, like most of us, I’m guilty of hiding away right now, but my general sporting buddy @gailsteedon convinced me this is what I needed. ⁠

And she was spot on!

We turned in to two kids, running along the pebbles (hard work), hoping over groynes (in gracefully), balancing our way across a tree stump (random find on the beach) and taking our shoes off and running @baywatchtv stylee along the sand🏃🏽‍♀️🤸🏽‍♂️

We grinned and laughed so hard, it was the best tonic. It felt so flipping good!

So, if you’ve not been outside today, consider this your reminder, just go do it, you’ll feel ten times better for it ❤️

Life is intense at the moment - I’m sitting here with one child asking me how to write ‘ear’, one asking intense questions about long division and the other shouting to tell me what’s going on in her zoom call with a big smile on her face😩⁠

But this week I’m a tiny bit more prepare for the balls that have been thrown at me and I’m not going to compromise on what I know is important right now - sticking some nourishing goodness in to our bodies and keeping our immune strong💥⁠

This weekend I took some time out, went to the local farmers market and picked whatever looked the tastiest, loosly built my weeks menu then batched a few different things ready to go. It felt so good!⁠

Right now I’m sticking with my 2021 intention and keeping things Simple - and this salad is exactly that. Quite simply a base of leaves - I used purslane and a mix of fresh mint and basil but anything goes - some fine slices of candied beet, half an avo and a sprinkling of toasted tamari nuts and seeds. All finished off with an equally simple dressing made up of hemp oil, pomegranate molasses and a sprinkle of sea salt.⁠

Life is hard right now, but whatever you do, don’t forget to nourish yourself, your body and your brain need it💪🏽⁠

I've never been one to bribe my kids to go outside, but right now it's flipping essential, needs must and all that!⁠⠀⠀

So when I hear them asking to make themselves a warm mug full of this good stuff, it quite literally always makes my heart glow✨⁠⠀⠀

We like to think of this as SUPER POWERED hot chocolate, bursting full of plant diversity, then finished with their favourite spice and a sneaky few mini marshmallows for luck.⁠⠀⠀

It's as simple as adding 1 heaped tsp of cacao powder to your favourite mug, a sprinkling of your favourite spice - a mix of cinnamon, ginger and cardamom is a fave in our house, warming through some plant mylk - my current obsession is @goodhemp Oat and Hemp Mylk and pouring over your mix. I also sneak in a little @wunderworkshop Golden Shrooms for a little extra energy and immune support.⁠⠀⠀

My three like to stick in as many mini marshmallows as they can get their hands on, and a few random cake sprinkles. Not too sure about the later, but it tastes flipping good!⁠⠀⠀

Top tip + if you want to make the switch from a pre-made hot chocolate mix to this, begin by adding a little maple syrup to give it that sweetness you're used to. I found over time reducing my measure little by little meant that eventually the need for the sweetness disappeared entirely, but either way, it's still a far more superior, gut loving drink⭐️ ⁠
The Truth About Boosting Your Immune System ~⁠

Hands up who tuned in to BBC1 last night to catch @dr_ronx delve help us make sense of the incredibly complex world of our immune system☝🏽⁠

If you missed it, I highly recommend giving it a watch to find out how WE can take control and DEFEND ourselves from COVID, as well as build our strength against the many colds and flu flying about.⁠

One of the biggest take homes for me was that if we show  our microbiome lots of love - the 38 trillion bacteria swimming around our gut - it will reward us by teaching our immune system was is a friend and what it a threat.⁠

And the best way to do this? These guys have the proof, it's not taking a load of expensive supplements, it's all about eating a diverse diet, brimming full of fruit and plants rich in fibre 🌱⁠

Think different coloured vegetables in one meal, veg taking centre stage on your plate, nuts, legumes and varied grains. ⁠
⁠
For me, the simplest place to start with are nutritious noodle and grain bowls - I like to keep a stock of brown rice and buckwheat noodles in my pantry, along with my favourite black, red and brown rice, tricoloured quinoa, puy and beluga lentils. Any of these, or a mix, are delicious quite simply topped with some roasted veg, a simple tahini dressing and a handful of roasted nuts.⁠

Is it just me or did anyone else find this morning Is it just me or did anyone else find this mornings home schooling has been BRUTAL?!

Three different maths and English sessions, all work submitted, lots of ‘mummy, how do you spell this’, ‘mummy, how do I do this on the iPad’...then after all this I had a half hour turn around to make and eat lunch before the next zoom 😳

I fear it’s going to a long and tiresome week so I’m getting ahead by roasting two massive trays of root veg bursting full of goodness. This little lot will be used for tonight’s noodles, tomorrow nights veggie shepherds pie, and the rest blitzed for Thursday nights pasta sauce.

Let's be honest, getting the news that the kids weren't going back to school Saturday evening wasn't really a shocker, but it's a stark reminder that the world of juggling is back in full force.⁠

But we've got this, we've proved to ourselves that we're more than capable of adapting to last minute changes.⁠

With that in mind, I guess my word of 2021 couldn't have been be more fitting - Simplicity✨I'm so guilty of doing it all, striving for perfection, something that's played havoc on my gut health for years now, but the last year has taught me A lot about the joy and benefit of keeping things simple.⁠
