I remember a fellow IBS sufferer looking totally flummoxed when she was told that A LOT of what she loves Christmas food wise she couldn’t eat – Brussel sprouts being one of them. It takes a lot of acceptance and hard work to adapt any intolerance diet, but as I know a lot of us instagrammers have found, it reaps so many rewards. For me it’s been about thinking differently, taking time to plan and constant learning from other lovely people in similar positions. What this fellow IBS sufferer couldn’t get her head around was that she was restricted to 3 or 4 Brussel sprouts max, and to make matters worse, if she wanted to mix this with other foods mildly tolerable (aka stacking), this number would have to be reduced further. So here’s where the creative thinking comes in to play…if the number of whole sprouts is so few, why not employ some visual trickery and shred them to make them go further. Believe it or not, this is a portion of just five sprouts!! This tiny little lot have been mixed with equal amounts of the ever delicious radicchio not only to help flesh out the dish but to boost nutritional values too. It’s called Smoked Sprouts and is simply tossed together with smoked paprika, lemon zest, juice, garlic oil and served with a sprinkling of roasted walnuts, chopped chives and a spicy bravas sauce. This little dish is full of flavour, nutrient dense and super simple to throw together. Ingredients
- 1 tbsp Coconut Oil
- 1 tsp Smoked Paprika
- 10 Brussel Sprouts, finely shredded
- 1/4 Radicchio Head, shredded
- 1 Lemon, zest
- 1 Lemon, juice
- Garlic Oil, drizzle
- 1/2 Cup Walnuts, toasted
- Chives, sprinkle
- Spicy Bravas Sauce
Instructions
- Heat the coconut oil in a pan and add the smoked paprika, heat through for 1 minute.
- Add the sprouts and heat through for 2 minutes.
- Add the radicchio and heat through for a further 2 minutes.
- Take off the heat and add the lemon juice, zest and garlic oil. Mix until combined.
- Serve with a sprinkling of walnuts, chives and a dollop of spicy braves sauce.
